Pikelets Recipe


2 large eggs
1/4 cup of vegetable oil or melted butter
2 Tbsp sugar (brown is best)
2 tsp gluten free baking powder
1 1/2 cups Healtheries GF baking mix
1/2 tsp baking soda
1/2 salt
1 cup buttermilk (and a little more if too thick)


Beat the eggs and mix in the rest of the ingredients. Mix as little as possible, but until combined, it is a very thick mixture and makes very puffy/thick pikelets. Top with maple syrup and butter.
