Spanish Fritatta

12 eggs
1 red onion – finely sliced
Bag of spinach – finely chopped
6 Agria Potatoes – peeled and finely sliced
Salt and Pepper, Spanish seasoning
1/4 cup water
Grated cheese (but only for those who can have dairy)
Cook potatoes in oil in a pan until soft but not fully cooked. Line a large baking dish with baking paper then put down the first layer of potato on the base of the tray. Cook the onion until just soft and place a layer on top of potatoes. Then lay down a layer of spinach and a sprinkle of seasoning. Repeat all the layers 3 times.
Beat the eggs together with water. Pour over the other ingredients. Place in the oven at 180 degrees for around 20mins.
Slice up into squares and top grated cheese.
